Nani’s Mouthwatering Meatloaf

Meatloaf always reminds me of childhood dinners at Nani and Papa’s house. Mom was never a big fan of meatloaf, so if she ever worked late at the hospital or was out of town, Nani would usually have us over for meatloaf. This is a quick and easy dinner to make that is also delicious for leftovers. I will undoubtedly make this while I’m in medical school so that I can have a delicious dinner and then will be able to make sandwiches for lunch throughout the week.

Nani’s Mouthwatering Meatloaf

Not only is this great served hot with mashed potatoes, but the leftovers can be thickly sliced for meatloaf sandwiches.

  • 2 lbs ground beef
  • 2 eggs
  • 1/2 cup dried bread crumbs
  • 1/3 cup onion soup mix (about 2 ounces)
  • 2 tsp Worcestershire sauce
  • Salt and pepper, to taste
  • Ketchup

Preheat the oven to 350 degrees. Mix all ingredients together. Form meat mixture into a loaf and place in a baking dish. Squirt or spread ketchup on top of the meatloaf. Place the baking dish in the oven and bake the meatloaf for about one hour. Remove and let rest for 15 minutes, before slicing into moderately thick slices and serving.
