Contrary to popular belief, not all cookies are baked; some can be made on the stove-top. My mom always made these with coconut, but my aunt usually omitted it, because my cousins aren’t the biggest fans of coconut. However, I just don’t think they’re the same without it. Nevertheless, these were a great treat to come home to after a long day at school.
Mom’s No-Bake Cookies
These were another one of my favorite cookies growing up. They’re especially great for road trips.
- 1 cube butter
- 2 ounces unsweetened chocolate
- 2 cups sugar
- 1/2 cup milk
- 1 cup peanut butter
- 1 teaspoon vanilla extract
- 3 cups quick oats
- 3/4 cup shredded coconut
- 1/2 cup walnuts, chopped (optional)
Place the butter, unsweetened chocolate, sugar and milk into a large saucepan and bring to a boil over medium high heat. Remove and add the peanut butter, vanilla, oatmeal, coconut, and walnuts. Stir well and drop onto waxed paper with a spoon into little mounds. Let them cool completely and enjoy!
