Whenever we stopped by our grandparents’ house for a visit, we could always count on there being some kind of cookie to munch on. These peanut butter cookies were a staple in Nani’s arsenal of baked goods. Not to mention, they are so easy to prepare everyone will think you spent an entire afternoon baking!
Nani’s Peanut Butter Cookies
These cookies are Nani’s favorite peanut butter recipe. It is one of the simplest recipes and takes next to no time to prepare. Their tasty, great when you need a quick treat, and the recipe can be easily doubled.
- 1 cup peanut butter
- 1 cup sugar, plus more for rolling
- 1 egg
Mix all ingredients well. Roll the dough into walnut-sized balls. Roll these in sugar and press tops gently with a fork in a cross-cross pattern. Careful not to flatten too much. Bake at 350 degrees for 10-12 minutes. Cool slightly on the pan to set before transferring cookies to a cooling rack.
